Classic Bolognese Sauce

Bolognese [boh-loh-N’YEH-zeh] sauce is a beloved classic Italian pasta sauce that's prepared like a stew for exceptional depth of flavor. This recipe makes enough for a crowd, so gather the whole family 'round, or freeze the extra for an easy meal later on.

Good Things Take Time

Adding the ingredients in stages takes a bit of time, but it provides noticeably deeper flavor in the end.

Instructions

Mince onions, carrots, celery, fennel, and garlic in a food processor. Heat oil in a pot over medium-high; add vegetable mixture and salt, and sauté until liquid evaporates, about 10 minutes.

Stir in chuck and pork, breaking it up with a potato masher. Add Italian seasoning and pepper, then cook until meat is no longer pink, about 5 minutes.

Add wine and reduce until evaporated, about 15 minutes. Reduce heat to medium, add half-and- half, and simmer until liquid is nearly evaporated, stirring frequently, about 10 minutes.

Stir in crushed and diced tomatoes, tomato paste, and bay leaves. Simmer sauce over medium-low heat until thick, stirring frequently, about 45 minutes. Discard bay leaves; season sauce with salt and pepper.
