Essentially a creamy, cheesy potato soup, this comforting soup has all the nibbles that just might be in any couch potato’s snack food repertoire. Pretzels are both ground to form a roux for thickening, and added whole over the top as a crunchy garnish. Velveeta, the cheese that melts like a dream, combines with potatoes, sour cream, and heavy cream for an incredibly smooth soup. Beer, beef jerky, and cheese popcorn round out this wildly wonderful soup for a surprisingly delicious bowl of couch potato goodness.

Instructions

Melt butter in a large pot over medium-high until foamy. Add onions and sauté until translucent, 3 minutes. Add garlic and sauté until fragrant, 30 seconds.

Stir in ground pretzels to coat the onions.

Deglaze pot with beer, scraping up any brown bits. Add broth, cover pot, bring to a boil, and cook 5 minutes. Add potatoes and cook until nearly fork-tender, 1012 minutes.

Whisk in heavy cream, sour cream, and cream cheese until cream cheese is nearly melted, about 3 minutes. Whisk in both Velveetas until melted, 3 minutes.

Stir in beef sticks, and simmer soup, stirring frequently, until heated through.

Garnish servings with scallions, popcorn, and pretzel twists.
