Keep all of the ingredients cold until ready to make the crust; this ensures even fat distribution, which creates a perfectly crisp and flaky crust.

Instructions

Whisk together flour, granulated sugar, and ½ tsp. salt for the crust. Cut in cold butter and shortening, using a pastry blender, until pea-sized.

Combine water and 2 Tbsp. chilled bourbon; add to flour mixture, stirring, until dough holds together.

Shape dough into a rectangle, and wrap in plastic; chill at least 1 hour or overnight.

Roll dough on a lightly floured surface into a 12×16-inch rectangle. Turn dough often to avoid sticking, adding flour as needed. Transfer dough to a 9×13-inch baking sheet (quarter sheet pan). Trim overhang to 1 inch; fold edge under and crimp. Freeze dough until firm, 30 minutes.

Preheat oven to 500° at least 30 minutes with a baking stone on rack in lowest position; reduce oven temperature to 400°.

Whisk together eggs, brown sugar, corn syrup, maple syrup, melted butter, 2 Tbsp. bourbon, vanilla, and remaining ½ tsp. salt for the filling.

Sprinkle chocolate chips and walnuts over crust; top with filling.

Bake pie on baking stone until it puffs slightly and filling looks set, 3035 minutes. Cool pie completely before slicing.
