Barbecue Chicken Bruschetta

Perfectly portioned and full of flavor, these zesty chicken bruschetta bites are an ideal appetizer.

Marinate the chicken in olive oil with a mixture of garlic, brown sugar, chili powder, and other spices, then throw it on the grill for a satisfying combo of hot and sweet. This Pomegranate Barbecue Sauce adds a tart and tangy touch, but a slightly sweet purchased barbecue sauce, like Sweet Baby Ray’s, tastes great, too.

Preheat grill to medium-high. Brush grill grate with oil.

Combine garlic, chili powder, brown sugar, ½ tsp. salt, ¼ tsp. pepper, cumin, and paprika in a small bowl. Coat chicken with oil, rub with the spice mixture, and let marinate 20 minutes.

Drizzle baguette slices, corn, and scallions with oil; season with salt and pepper. Grill corn 4 minutes, turning frequently. Grill baguette slices until crispy, 2 minutes per side. Grill scallions 1 minute.

Slice corn kernels from cob and dice grilled scallions.

Grill chicken until an instant-read thermometer inserted into the center registers 165°, about 4 minutes per side. Let chicken cool, then dice.

Combine chicken, scallions,corn, and cilantro in a bowl.

Assemble bruschetta by topping each baguette slice with 1 slice avocado and 2 Tbsp. chicken mixture. Drizzle bruschetta with Pomegranate Barbecue Sauce.
